Sweet & Spicy GUINNESS Meatballs

 

Sweet & Spicy ‘Guinness’ Meatballs

Beef Meatballs (frozen or homemade)

½ Cup Hoisin Sauce

½ Cup Teriyaki Sauce

½ Cup BBQ Sauce (homemade or store-bought)

¼ Cup Ketchup

¼ Cup Boysenberry Jam

12 oz BTL Guinness Beer

4 Medium Jalapeños, fresh / seeded |Scotch Bonnet Pepper if you dare J

½ Cup Brown Sugar

1 Table Spoon Chili Powder

1 Tea Spoon Ginger (powder)

Salt & Pepper

 Cooking Instructions:

Combine all ingredients in a slow cooker and simmer for 45 minutes to 1 hour. 

Take the meatballs out and put in an oven safe pan without the sauce. 

Arrange in on layer and bake for an additional 20 to 30 minutes at 375° (oven temperature varies; bake until outside of meatballs is slightly crispy.  Do not use broiler, sauce will have a burnt taste.)

Strain the cooking sauce and put in a medium sauce pan. 

Cook on medium heat until sauce is reduced by half (stir frequently). 

Once the sauce is reduced, take off the heat and add 1 teaspoon of sweet butter, stir until the butter is melted and the sauce has a nice shine.  

Pour into serving dish.

Take the meatballs out of the oven and let cool for 15 to 20 minutes.

 

Serving Suggestions:

Put 3 to 4 meatballs onto wooden skewers or arrange on serving tray with the prepared sauce on the side.

You can sprinkle shopped scallions on the meatballs for added flavor and color. 

You can put a hot pepper under the broiler until skin is charred and put it in the sauce for some added spiciness.  However make sure your guests are aware that the sauce will be hot. 

Do not pierce the pepper for medium hot

Pierce the pepper for hot (do not cut open)

Finely chop or crush the pepper and add to the sauce for super hot (the more seeds you leave in,  the hotter the sauce will be.)
